This little piggy went to roast

As I’ve said before, Sundays are for country walks and roasts.  Here’s our pork roast inspired by C&C Marriage Factory.  It may take a while to cook but it’s easy.  Easy like Sunday morning.  Yeah.

Slow Roast Pork w/ Sticky Sweet Balsamic Glaze

Ingredients

Pork shoulder for 2 (we go for a generous portion but just get what you feel is right)
1/2 cup brown sugar
1 tablespoon cornflour
1/4 cup balsamic vinegar
1/2 cup water
2 tablespoons soy sauce

Directions

Heat the oven to 220 C and place pork on top of crushed foil in a tray (to allow the fat to drain).  Roast for 30 mins before covering with a loose tent of foil and turning the oven down to 170 C.  Go enjoy yourself for 3-5 hours.  About an hour before the roast is done, combine ingredients for glaze in small sauce pan.  Heat and stir until mixture is thick and glossy.  Remove any string and smother the pork with glaze 2 or 3 times during that last hour of cooking. Pull apart with forks and serve with remaining glaze on top. 

We had ours with baked sweet potatoes, fried cabbage w/ bacon and brown yorkshire puddings (brown because I’d run out of plain flour but hey, that also made them healthy right?).
