Been eating macaroons and chocolate pear pastries all morning and need some yin for all that naughty yang?  No?  Just me?  Well, here’s a healthy yin anyway (see what I did there?).

A bowlful of healthy
(Serves 2)

1 large mango
1 can kidney beans (drained and rinsed)
1 avocado
1/2 a red onion
1/2 a lime

Directions

Chop the mango, avocado and onion, add the beans (adzuki are also good), and squeeze over the lime.  Feel virtuous as you taste the healthy rainbow.

It’s an easy yin (sorry, I’ll stop now) plus the lime juice keeps the avocado fresh looking if you want it for your packed lunch and the beans keep you full even if you’re a dude. 

Tips

Remove the avocado stone by carefully chopping into it with a knife. Give it a jiggle and it should just pop out.  Still in the skin, cut a grid into each half of the flesh and then use a dessert spoon to lift it out.

Leave the top on your onion in place as it gives you something to hold whilst you slice in lines almost to the top.  Then slice the other way for beautifully tiny diced onion.

Peel your mango before slicing down either side of the stone to give you 2 big chunks of yellow.  Then you can go Rambo about the stone for the rest or just munch it.

    Looks delicious…………I’m wondering if we can use white beans. I’m not sure about the spelling: Cannellini white beans. I like black beans, seasoned, in cans, too. Anyway, the combination you present looks very delicious, and I will try for lunch tomorrow! Thank you…..
