Twinings iced tea

It’s no secret that I love tea but it would be wrong to say that I love any tea.  I guess my relationship with tea is a bit akin to my love affair with gin – rocky at first and after a couple of false starts and rough nights, when I found the right one, it was love.

In the studio at bluebellgray we fuel ourselves with Lady Grey and firmly believe that Twinings should release a limited edition Bluebell Gray tea.  However, most often at night I prefer something lighter like a white tea or green tea (my favourite pomegranate green tea blend was opened by the husband’s clumsy mitts and as such, not photo fit).

Anyway, with the warm weather, I thought I’d share a refreshing recipe for iced tea.

Lady Grey Iced Tea (the tipple of upper class garden parties)

3-4 bags of Lady Grey tea
juice of half a lemon
caster sugar to taste
loads of ice – I bought a bag because I’m too lazy to make my own
evaporated milk (optional)

Directions

Boil a kettle and steep a jug of tea for 5 minutes.  If you’re feeling posh how about this limited edition Diamond Jubilee Tea Blend?!  I brewed it much stronger than my usual insipid colour because by the time you add the other flavours and all the ice it is somewhat diluted. 

Once completely cool (you can add ice now to speed the cooling process – again, the lazy thing…) squeeze in the lemon juice and add your sugar, tasting along the way until you’re happy.

Serve in ice filled glasses and garnish with something fancy to impress your friends.  If you really want to treat yourself keep a little jug of evaporated or condensed (extra indulgent) milk on hand and add a splash as you wish.  Most importantly don’t forget to stick your pinky out whilst sipping daintily (if in doubt, just think ‘what would Kate do?’.

    Living in the south (US), iced tea is a year round drink; making your own is not only less expensive, it’s healthier without the additives/sugar. Here’s a tip for avoiding diluted tea. For a 2 quart pitcher, place 6-8 teabags (depends on how strong you want it!) in the bottom of pitcher, pour boiling water over to the depth of 1/4 of the pitcher. Let steep until tea is black (a few minutes). Remove teabags. If you want sweet tea, add sugar at this point (1 cup will get you VERY sweet tea) so it will dissolve well in the warm tea. Or, leave unsweetened and let people add sweetener to taste (Splenda dissolves perfectly in cold iced tea). Fill up rest of pitcher with ice cubes and stir. Tea should come out perfect. For flavor, toss in orange and lemon slices and refrigerate until using. You can still pour over additional ice and not dilute the tea much. I love using the black teas like English and Irish Breakfast, but it is also marvelous with all the Twinings fruit teas. Hmm -m, what about using half black tea and half fruit tea bags together for instant flavor – why didn’t I think of that before?!!
