Make Tony proud

Better than any pizza money can buy.  A big claim I know but they’re cheap, they come with as many toppings as you want and in any size you want.  They’re probably not entirely ‘healthy’ but let’s just say they’re not that bad for you either.

Pizza

500g bread flour
1/2 tbsp salt
330ml tepid water
7g sachet of dried yeast
1tbsp golden sugar (you know, or normal if you’re not fancy)
2 tbsp olive oil
tomato pizza sauce (ours was just passata w/ oregano and seasoning)
all the toppings you can dream of

Directions

Mix together water, yeast, sugar and oil.  Sieve the flour and salt into a very large bowl and make a well in the centre.  Pour in your liquid and slowly combine until eventually you have a dough.  Knead the dough on a very well floured surface (I found I needed about another 50-75g flour for this part) for a few minutes or as long as you can be bothered.  Place the dough in a round back into the bowl (well floured again) and set to one side with a damp tea towel on top.  I always wondered why it has to be damp and guess what?  I still don’t know.

Leave it well alone for about an hour and then, as if by magic (or yeast magic), it will be double the size it was before and the husband will be very happy that he has enough dough to make the biggest pizza he’s ever eaten…

Preheat your oven to 240’C and place a couple of flat trays inside to heat. 

Flour your worktop again and knead, knead, knead that dough.  When it’s not sticky anymore and you’ve had enough, divide the dough into 4 EQUAL pieces (equal husband, equal!), take a rolling pin and make a pizza shape!  Roll it as thin as you can and use plenty of flour so it doesn’t stick to the worktop, turn it over regularly too.

Add the tomato sauce and then go all Tony Soprano with the toppings (that’s crazy Italian if you’ve been in a hole the last decade).  I went for mozzarella, olives, parma ham, mascarpone, red onion and oregano.  Transfer carefully to your heated tray and pop it in the oven.  We cooked ours for about 14 minutes but really it would depend on your oven and how thin the pizza was so keep an eye on them (as if you’ll be able to look away).

When they’re crispy and golden round the crust take them out and add any additional heat-fearing toppings like basil or rocket.

Serve with a movie, a large couch and loose pants.

    whoa whoa. This looks drop-dead dellicious. The cheese is so oozy and yummy, and it looks fresh and doughy . just perfect.

    You’re quite the chef – I’ve never seen a homemade pizza look this good!

      ha yeah I love the knife and it’s actually REALLY good for cutting pizza too – so many novelty kitchen things like this look cute but are a bit rubbish practially speaking 😉

    That looks good! The ruchetta makes it even more ;P In my household, pizza is my husband’s territory, he takes pride in his pizza and we just wait and eat. Being italian he thinks pizza should be simple with good ingredients and love to use mozzarella di buffala to top the pizza with and I can confirm the taste is fabulous! Buon apetito!
