Skinny icecream

So the trouble with having a sore throat is the medicine.  Gallons of icecream.  That’s not necessarily a problem except that, with 6 weeks to go, it’s wreaking havoc with Operation Beach Body.

But then… lightbulb moment – I remembered about this little gem.  Icecream but not as you know it.  It’s bananas.  No really, bananas.  And that’s it.

I went kinda tropical but you can go pure banana, or add in a generous scoop of peanut butter, or try a swirl of honey or really anything you fancy.

You know what?  If you did a taste test you’d know which was the imposter but this is also the absolute best way to eat bananas and bananas are very, very good for you.

Skinny banana chococonut icecream
(serves 6)

8 ripe bananas
1 cup toasted coconut
1/2 cup good quality cocoa powder

Directions

Peel and chop the bananas and pop them in a sealed tub in the freezer for around 2-3 hours.

Scoop the frozen banana pieces into a food processor and blend.  You’ll prob need to stop and scrape quite a few times but persevere because eventually you’ll get iced banana grit followed by rich creamy banana smoosh.  Add your cocoa and blend, then remove the blades and stir in the toasted coconut.

Place the mixture into a loaf pan or icecream tin (who has one of those really?) because I think the metal cools better and helps the icecream to freeze.

You’ll have to leave it alone now for at least 3 hours.  Ideally 5.  Or maybe the next day.

When you’re ready simply scoop that guilt free deliciousness into cones or cups and enjoy.  Feel smug.  Post photos to all your social media channels and tell everyone you’re just enjoying one of your 5 a day – really.

        Made some of this, this afternoon. Couldn’t wait any longer & have just tried it & it’s absolutey delicious. I used peanut butter instead of coconut.

        I was going to ask you how long it will keep in the freezer, but I don’t think there’s much point.

      I guess so! Not sure the choc flavour would be strong enough but I guess that would depend how much powder you added!

    I just pinned this and cannot wait to try it! I’ve made magical banana ice cream with peanut butter, but I love your idea of using cocoa and toasted coconut to make it tropical. Perfect for summer!

    Ah :)) that looks sooo fabulous! I’m definitely gonna try it out soon 🙂 such a wonderful idea! hmm some people really do cure* their sore throat with ice cream; like those who bath in the sea at winter so that they get stronger – rather adventurist. :))
    mm I’ve missed your recipe posts, they always look irresistible. hmm I think you’d enjoy this one: http://natashaskitchen.com/2012/02/16/ukrainian-syrniki-recipe/ (the dish is called syrniki, I think this version is explained well) it’s delicious and what’s more *healthy :)) oh and it disappears for less than 5 minutes.

    That’s awesome! I remember stumbling across a post to a pancake recipe that was just two eggs and a banana. That’s it. And they’re really quite good! This reminds me of that. It’s shocking how versatile bananas are.

    Oh, my………and I love coconut, too. I keep a package of flaked/shredded coconut in my freezer at all times! Thank you so much for this great idea. And bananas have (I believe) potassium for keeping us alive and well!

      yes they do – supposedly they have a multitude of health benefits – I guess that’s why athletes eat so many of them

    I thought you were kidding when you said skinny ice cream made of bananas!! I had no idea you could make ice cream just with bananas as a base instead of tons of cream. This is such a brilliant idea, Wendy!!
