Confession: I am a pav-lova (see what I did there?).

We make this recipe, yes sometimes me, sometimes the husband, for basically every party we host or event we attend which requires a dessert shaped token.  It’s easily modified to suit however many mouths you want to feed but we find this one generally does about 12 at a party.

Winter Party Pavlova (serves 10-12)

8 egg whites
a pinch of salt
500g caster sugar
4 tsp cornflour
1 tsp white wine vinegar
softly whipped double cream
fruit of your choice
festive edible decorations (optional)

Directions

Preheat the oven to 180°C and line a sheet baking tray with greaseproof paper.

Beat the egg white and salt in a large bowl until it forms stiff satiny peaks – use an electric whisk unless you want to experience physical and mental torture waiting for those peaks…  Begin adding the sugar, spoonful at a time until it’s completely incorporated and you have a wonderfully thick glossy mix.  Sprinkle on the cornflour and vinegar and fold in with a metal spoon.

Spread the mix onto the baking sheet trying to create a smooth circle, about 25cm diameter should do it.  Place in the oven and immediately reduce the temperature to 150°C.  Cook for 1hr – 1 1/4 hr, just check to see if the sides are cracked and toasted looking, if not, leave it a little longer.  When it’s done, simply open the oven door and leave it to cool in there.

When you’re ready to serve carefully peel the paper off the base of the meringue and simply pile on the cream, followed by the fruit (I went for frozen berries for ease and for the wonderful juice which dribbles down the sides and looks terribly festive) and the decoration if you have some.  I sprinkled over some edible golden sugar balls and pink shimmer but you could try edible pansies or chocolate curls or really anything you fancy.  I intended to drizzle over some rose syrup too but, well, I forgot…

For about 18 months I had my eye on a golden cake slice and, although I thought no-one was listening, there was one under the Christmas tree.  I was overjoyed (surely a sign of my age if a cake slice is so exciting?).  I felt it tripled the joy of my pavlova serving experience and, if you think you need one too now, you can get it here.
