I say perfectly easy but the first time I tried this out I filled the room with smoke and the toasts were ‘crispy’. So I should correct that to say this is perfectly easy so long as you have a non-stick fry pan!
Fruity French toast with berries, yoghurt and honey
4 slices fruit loaf
2 free range eggs (I once watched an awful documentary, free range ALL the way please)
a generous splash of milk, let’s say 100ml
butter for frying
low fat Greek yoghurt
1 cup of berries
honey
Directions
Whisk up the eggs and milk in a basin – I do one egg and half the milk at a time or the bread would drown in there. Soak the break briefly on both sides before transferring gently to your preheated buttered (non-stick!) fry pan. Fry the bread on both sides until golden, probably 2-3 minutes over a medium heat.
Serve with yoghurt, berries of choice and a good dribble of honey.

I’m so glad it’s Thursday! Not just because it’s almost the weekend and this has been quite the week, but because Thursdays I teach an art class for 3 hours and my class are so unbelievably sweet – it’s cups of tea and wonderful people with nothing more to care about for 3 hours than painting. Perfect. Plus a little trip to the mall with my mum after, looking forward to that too.
