Lunch for One – Smashed & Loaded Sweet Potato

 

A sweet, creamy, smokey, salty, herby, protein packed lunch that’s ready in 10 minutes?  Sign me up.  This sweet potato hits all the right macros as well as using lots of my favourite ingredients.  I’ve been making this twice a week since I discovered the recipe, no joke.

SMASHED & LOADED SWEET POTATO

Ingredients (Serves 1)

1 small sweet potato
25g parmesan, finely grated
3 tbsp Skyr unsweetened, protein yoghurt
1 tsp salted butter
1/2 tsp sweet smoked paprika
chilli flakes to taste
2 eggs
fresh herbs of choice (parsley and coriander are my favourites)

 

Method (10 mins)

Place the eggs in a pan of simmering water for 6 minutes or to your liking.

Prick the sweet potato all over with a fork and microwave on high for 5 minutes or until cooked through.

Smash the sweet potato flat between 2 pieces of greaseproof paper and fry in a dry, non-stick pan with the parmesan on top for a couple of minutes.

Meanwhile, melt the butter with the smoked paprika and chilli flakes – I do this in the microwave for 30 seconds.

Plate up the parmesan sweet potato and top with the yoghurt, smokey chilli butter, eggs and herbs.

Enjoy.
