Operation beach body is in full swing and this recipe (suggested to me by a lovely reader Jules) is the perfect weekend breakfast ‘treat’. Packed with protein and other healthy stuff but still with the illusion of naughtiness? I’m in. The husband deemed them ‘awesome’ and I’d say although you’ll not be fooled, they’re a darn good alternative.
I sprinkled some cinnamon on mine, a tip I picked up at the weekend, as cinnamon is known to increase metabolism for a short period after eating – perfect as pre workout fuel, helping you burn a few more calories – hey, every little helps right? The husband went for a smear of peanut butter on his which looked pretty darn good and is also a great source of protein and healthy fats.
This recipe serves 2 making 3 pancakes each but, you know what, you could go right ahead and eat the whole batch yourself and your jeans are still gonna fit!
Super skinny blueberry pancakes
(serves 2)
1 large ripe banana, mashed
2 medium free range eggs
1/2 tsp butter (or low cal. spray)
1 cup blueberries
Directions
Whisk the eggs with until frothy before beating in the mashed banana.
Heat a good non-stick fry pan on medium and add the butter or low cal. spray. Spoon the pancake mix onto the pan. They should spread as normal pancakes would to a circle a little larger than the palm of your hand. Sprinkle approx. 8 blueberries onto each pancake. Cook for 2-3 minutes.
Now you flipping skills come into play. Get under them fast and flip – remember they don’t have the structural integrity of a regular pancake so any hesitation is potentially disastrous.
Cook for a couple of minutes on the other side until pancake appears cooked through and lightly browned to the outside. Save those bad boys with your super quick spatula skills and serve up with another handful of fresh blueberries.
Yum they look and sound so tasty! I love how they have so much banana too, my fave fruit! 🙂
