Lockdown or no lockdown, I honestly cannot imagine a day much better than this. The husband brought the new garden table (which has been hibernating in the garage since completion mid winter) out for a debut, Hunter picked some flowers from the garden, the sun shone a balmy nine degrees, we shared a giant stack of the best banana pancakes ever (scroll down for the recipe), we played music and we were together. Until the littles took a nap. Then we drank gin.
And the people stayed home. And read books, and listened, and rested, and exercised, and made art, and played games, and learned new ways of being, and were still. And listened more deeply. Some meditated, some prayed, some danced. Some met their shadows. And the people began to think differently.

THE BEST BANANA PANCAKES
Serves 4 (10 pancakes)
1 1/2 cups plain flour
2 tbsp sugar
2 1/2 tsp bicarbonate of soda
1 medium banana, mashed (the riper the better)
2 large eggs
1 cup milk
3 tbsp butter, melted (plus a little more for cooking)
Mix dry ingredients in a large box. Whisk the wet ingredients together in a jug and pour into the flour mix. Fold the batter gently with a spatula until just blended – be sure not to over-mix – the batter should be thick and lumpy.
Pop a griddle or non-stick pan over a medium heat until hot. Put a pat of butter into the pan to cover the base. I drop the batter into the pan using a soup ladle, spacing the pancakes about 2 inches apart. Resist the temptation to touch them until a few holes form on top of each pancake and the underside is golden brown – usually around 2 minutes. Flip the pancakes and cook until the bottom is golden brown and the top is puffed – 1 to 2 minutes more.
I transfer the pancakes to a plate on the very bottom of the grill, warming under the bacon being grilled above. Repeat until you have a stack as tall as you desire.
Enjoy with crispy bacon and honey.
