Crabvocados – brunching like kings

Avocado chilli crab toasts - recipe by Thankfifi

If you’re going to eat anything this weekend make it brunch.  Start with this brunch and you’ll begin to forget the other meals in the day even exist – this brunch is that good.  You see I was never really a fan of crab…  until these happened.  And I wanted to photograph them when the hungry people wanted to eat them.  I like to live life dangerously.

Rewind to last weekend.  Our friends visited from Ibiza (should’ve been the other way round, like last time, but I’ll let that one slide for now), hit up the fish market and came home with kilos of seafood.  Seriously, I could have basically opened my own fish market.  Salmon, scallops, lobster – I was excited.  But crab?  Maybe it was those nasty crab sticks that generated these feelings I used to harbour towards crab (and let’s just be honest that no part of a crab is the shape of a stick) or maybe it’s that they’re kinda like the spiders of the sea… but that’s all changed.

I mean cucumber?  Tomato?  Meh…  Avocado?  Now you’re talking.  Chilli?  Crab?  Coriander?   We’re onto something.  Ok, chef Ally was onto something.  (Yep, I’m that girl that invites friends to stay and then let’s them cook for me.  Don’t judge me – it’s the ultimate house guest win.)

So make these for guests or make them for yourself and eat them all day long.  Just make them.  Embrace crab.  Show it some love.  And eat it.

CHILLI CRAB AVOCADO TOASTS
(Serves 4)

150g unpasteurised cooked crab meat
1 red chilli, deseeded and finely sliced
1/2 cucumber, finely diced
8 plum cherry tomatos, finely diced incl. the juice
2 limes
Small handful coriander, chopped
Salt
2 very ripe avocados
4 Wholemeal rolls (or bagels or rye or whatever floats your boat)

Directions

Pick through the crabmeat to double check there’s no shell in there before adding the cucumber, tomatoes, the juice of half the lime and salt to taste.  Add the coriander at the last minute.

Now for the avocado party.  There’s always a party when there’s avocado.  Puree the avocado in a food processor with the juice of 1 lime, 2 tsp of salt and 2 tsp of water.  What you’re after is the super smooth, creamy avocado paste of dreams.  It’s not just me that dreams of avocado is it?

Toast your bread of choice and pile them high.  Wipe the dribble off your chin.  Try to share.  Happy weekend!

These look mouth-watering! Is crab pretty expensive, or is this do-able for the average weekend?
