With the weather changing, as documented in yesterday’s post, it really felt like soup season had arrived so I searched my beloved Pinterest and came up with this roasted tomato soup recipe from www.spelonca.com.
I omitted the garlic of course and the coconut oil as I didn’t have any to hand and added some thyme and red onion to the soup base. Then I used some of my Graze roasted savoury seeds to garnish along with the olive oil and basil.
It was really pretty good and comforting and the husband was pleased as he’s been a bit deprived of organised lunches of late. Wife – 1 point.
