They might not be the most beautiful pancakes to look at but, let me tell you, they taste AMAZING. Sweet and fluffy and full of oat goodness.
I recently attended an online cook-along with Madeleine Shaw (hosted by Aveeno) and she created these incredible pancakes for us to try. The caramelised banana is a winner for me but you can basically add your choice of toppings – yoghurt, honey, coconut, chocolate, nut butter, maple syrup, berries, bacon – let your imagination run wild.
Oh, and, a word to the wise, do not expect to eat these alone…
OAT PANCAKES WITH CARAMELISED BANANA
Ingredients (Makes 6)
1 ripe banana
125ml oat milk
50g of porridge oats
75g of oat flour
1 tsp of baking powder
1/2 tsp cinnamon
1 tbsp maple syrup
Pinch of salt
Coconut oil or butter for cooking
2 ripe bananas, sliced lengthways
1 tbsp maple syrup
To make the pancake batter, roughly mash 1 banana in a bowl and mix through the other ingredients until it forms a batter.
Heat a pan with a tsp or so of coconut oil or butter and place two tbsp of the batter on the pan. Fry each side until golden (around 2 minutes each side) and repeat with the remaining batter. I kept my first batch warm in a low oven.
Meanwhile, heat the other 1 tbsp of maple syrup in a separate pan, add the sliced bananas and fry for a few minutes each side until golden brown and cooked through.
Plate the pancakes with the caramelised banana on the side, add toppings to your taste and enjoy!
